The hospitality and gastronomy sectors rely on more than culinary excellence. Successful restaurants and catering businesses require effective leadership, strong communication, motivated teams and skilled managers capable of handling human resource challenges in fast-paced working environments. Recognising this need, the Erasmus+ project “Methodology of Teaching Human Resource Management for Current and Future Catering Employees” (HRM Project) has developed innovative educational solutions to support the next generation of gastronomy professionals.



Why Human Resource Management Matters in Gastronomy
While vocational education in gastronomy traditionally focuses on technical and culinary competencies, employers increasingly highlight the importance of interpersonal and managerial skills. Many graduates enter the labour market with excellent professional preparation but limited knowledge of team management, conflict resolution, employee motivation, or recruitment processes.
These competencies are essential for both current and future catering professionals. Restaurant managers and chefs often find themselves leading teams without receiving formal training in human resource management, creating challenges in communication, motivation, and workplace organisation.
An International Erasmus+ Initiative
The HRM Project brings together educational institutions and industry partners from Poland, Germany, and Italy to address this skills gap. The initiative aims to strengthen human resource management competencies among:
- Students of gastronomy and catering schools;
- Recent graduates entering the labour market;
- Vocational teachers and trainers;
- Professional mentors and industry practitioners.
More than 200 participants have contributed to project activities, helping to shape practical educational resources tailored to the realities of the gastronomy sector.
Innovative Educational Resources
One of the project’s key achievements is the development of a comprehensive HRM curriculum specifically designed for catering education. The programme focuses on five essential areas:
1. Employee Selection
Participants learn how to recruit and select suitable team members, prepare job advertisements, and conduct effective interviews.
2. Team Building
The curriculum explores team dynamics, communication strategies, and methods for developing productive and collaborative workplace cultures.
3. Task Delegation
Future managers gain practical knowledge on assigning responsibilities, empowering employees, and improving operational efficiency.
4. Conflict Resolution
Participants learn techniques for identifying, managing, and resolving workplace conflicts before they impact team performance.
5. Employee Motivation
The programme introduces motivational theories and practical tools that help managers engage and retain employees.
Learning Through Experience and Digital Innovation
The HRM Project combines traditional educational approaches with innovative teaching methods. Inspired by David Kolb’s experiential learning model, the programme encourages participants to learn through practical experience, reflection, and active experimentation.
To further enhance accessibility and engagement, the project has also developed modern educational videos supported by digital technologies and artificial intelligence tools. These resources allow learners to access training materials anytime and anywhere, supporting flexible and self-directed learning.
The integration of digital solutions not only improves learning outcomes but also strengthens participants’ digital competencies—an increasingly important requirement in today’s labour market.
Supporting Teachers and Trainers
In addition to resources for learners, the project has created detailed lesson plans and teaching materials for vocational educators. These tools help teachers deliver structured, engaging, and practical HRM lessons while introducing innovative pedagogical methods into vocational education.
By strengthening the competencies of trainers and educators, the project contributes to long-term improvements in the quality of gastronomy education across Europe.
